Creamy and comforting soup made with flavorful kielbasa, tender potatoes and nourishing kale. This recipe soothes your soul and warms your body.

Ingredients

  • 1 Tbls Avocado Oil or olive oil
  • 2 Tbls Ghee
  • 12 oz Kielbasa Sausage
  • 1 cup Yellow Onion chopped
  • 2 cloves Garlic minced
  • 2 lbs Red Potatoes cubed
  • 2 cups Kale chopped
  • 14.5 oz Can of Coconut Milk Full Fat
  • 3 cups Chicken Broth
  • 1 tsp Salt
  • 1/4 tsp Crushed Red Pepper Flakes

Instructions
Instant Pot

  1. Turn Instant Pot to ‘saute’ mode and add in the oil and ghee. Add in the sausage and onion and saute for 3 minutes and then hit ‘cancel’ button
  2. Put the rest of the ingredients into the Instant Pot, seal the lid and close the steam valve. Turn to ‘pressure’ mode and set time to 10 minutes

Stove Top

  1. Heat oil and ghee in a soup pot over medium heat. Add in the sausage and onion and cook for 3 minutes. Add in the rest of the ingredients, bring to a boil and reduce to a simmer. Cook until potatoes are tender (about 20 minutes)
